DirectionsStep1Cook rice according to the directions. Rice cooking time will vary depending on what type/method you use.Step2In a pan, heat 1/2 tablespoon olive oil. Sauté chicken for 15-20 minutes until brown on edges. Remove chicken from the pan and set aside.Step3In the same pan, add additional 1/2 tablespoon of olive oil. Heat the oil and sauté onions and garlic for 5 minutes.Step4After 5 minutes add in peppers and carrots. Sauté for an additional 5 minutes until they start to soften.Step5Push the veggie mixture to one side of the pan.Step6In a small bowl, whisk together eggs until combined. Add eggs to the pan and scramble on the empty side of the pan.Step7Once eggs are cooked (about 1-2 minutes), stir together with veggie mixture.Step8Add pepper, ginger, red pepper flakes, toasted sesame oil, coconut aminos, thawed peas, cooked rice and cooked chicken back to the pot.     1. Heat your pan over medium high heat. Whisk together the egg and egg white and season with salt and pepper. Add 1 tsp of vegetable oil to the pan. Add the eggs and cook until just scrambled. Remove from pan and set aside.
    2. Add the remaining vegetable oil and sesame oil to the hot pan. Add the scallions, cabbage, carrot, garlic, ginger, and any other veggies you like. Cook for 1-2 minutes until they just begin to soften.
