Cook for 3–4 minutes, or until the lobster is firm and tinged with brown. Mix the sherry and brandy together and pour over the lobster, light the alcohol by either tipping the pan towards the gas flame or with a match, and flambé the lobster (keep a saucepan lid nearby in case the flame gets out of hand). Using a slotted spoon, transfer the lobster to a plate and set aside. Add the cream to the pan and stir to heat.
2. Toast and butter the bread. Remove the crusts and cut each slice in two diagonally so you end up with eight triangles. Keep warm.
3. Lightly beat the egg yolks with a fork. Add 2 tablespoons of the warm cream mixture to the yolks and mix. Return to the sauce in the pan, whisk well, then put back on a low heat and stir for 3–4 minutes to thicken the sauce. The mixture must not overheat or boil or the eggs will scramble. Stir in the lobster and any juices on the plate. Season, add the cayenne pepper and serve on the triangles of hot buttered toast or, for a main meal, serve with boiled rice. Sprinkle with a little cayenne before serving.
