Total Time: 22 minsCategory: DessertCalories: 104 per serving1. Preheat oven to 340 degrees F and place rack in the middle position. Line 1-2 baking sheets with parchment paper. Chop the almonds to resemble the texture of oats. Chop walnuts into small pieces about the size of the chocolate chips. Measure and mix the almond flour, oat fiber, gelatin, salt, and baking soda into a smallish bowl and whisk together.
2. Cream the butter with the vanilla, low carb brown sugar, and Sukrin :1 (brown and white sugar replacements) until light and fluffy; about 1-1 1/2 minutes.
3. Portion the dough with a 1 1/2-2 tbsp dough scoop, or use a regular spoon, and space about 2 inches apart on the baking sheet. The dough portion should be the size of a whole walnut. I get 12 portions on one standard sized cookie sheet (half-sheet pan).
4. I get 24 cookies per batch. The nutritional info assumes 20 cookies, taking into account that people have different equipment at home. Ovens vary so adjust the oven temperature or cooking time per your oven.

Frequently Asked Questions

Are low carb chocolate chip cookies gluten free?

Low carb chocolate chip cookies are made with almond flour, which you know is gluten free. This means you need to add xanthan gum to act as a binder that will keep your cookies from falling apart. Using erythritol will sweeten your low carb chocolate chip cookies without the need for traditional sugar.

Can you make low carb chocolate cookies with swerve?

Making low carb chocolate cookies requires some alternative ingredients. As I'm sure you know, ingredients like wheat flour, sugar, and sweetened chocolate chips aren't keto friendly ingredients. And those are the most common things you'll find in "normal" cookies. So, instead of using sugar - which is loaded with carbs - you'll want to use Swerve.

How many carbs are in these keto chocolate chip cookies?

These keto chocolate chip cookies have only 4 grams net carbs each! But if you’re seriously averse to molasses or are following very strict keto, you could sub a bit of maple extract for a similar flavor. Even better, you can replace both the sweetener and molasses with Besti “keto brown sugar” instead!

Is sukrin gold keto and low carb friendly?

Many low carb and keto bloggers have begun using the Sukrin Gold in their desserts, too. An ingredient I have been experimenting with a lot recently is the Sukrin Peanut Flour.
