2. In a large bowl, cream together cold butter and sugars until light and fluffy, about 4 minutes. Add eggs one at a time, mixing well after each addition.
3. Add cake flour, all-purpose flour, oats, cornstarch, baking soda, salt and cinnamon and stir until combined. Stir in raisins and walnuts (optional).
4. Chill dough for 15 minutes.

3. Add in the eggs, one at a time, beating well after each addition, followed by the vanilla, if using. Add in the cake flour, oats, all-purpose flour, cornstarch, baking soda, salt, and cinnamon and mix on low speed until incorporated. Lastly, stir in the raisins.
4. Refrigerate the dough briefly for 15 minutes.
