1. Preheat oven to 350 F. Line the bottom of a 9-inch springform pan (or a pan with removable bottom) with parchment paper. You can wrap the pan with a layer of aluminum foil, in case of leaks. We are not using a water bath.In a bowl, combine the almond flour, butter and erythritol, stir to combine. Spread the mixture on the bottom of the pan and press to make the top smooth. Bake for 10 minutes, then let it cool to room temperature.
2. In a large bowl, cream together the cream cheese and sugar for 3-4 minutes, scraping down the bottom and sides of the bowl. Add vanilla, lemon juice (optional) and lemon zest (optional). Mix to combine.
3. In a heat proof bowl, combine egg, egg yolks, lemon zest, juice and powdered erythritol. Whisk to combine.

2. Next, in a mixing bowl, cream together the cream cheese sugar alternative and Xanthum Gum (or Guar Gum) until smooth and without lumps. I use a paddle attachment for this. Then add the lemon extract and the eggs, one egg at a time, stirring between additions. Then you can mix in the heavy whipping cream.
3. Transfer this to the prepared pie crust, taking care to not overflow the crust. Bake this for 70-75 minutes or until the edges appear appear to be set. The center will not be totally set at this time so it is important to allow it to set on its own in order to prevent cracking. One way to do this is to turn the oven off and allow the cheesecake to stay in the oven for another 30-60 minutes. Then remove the cheesecake and allow to cool until you are able to cover it and refrigerate the cheesecake for a minimum of three hours.
