2. Bring 2 cups of water to a boil.
3. Place the prepared ginger in a heat resistant glass pitcher (or other convenient container) and pour over the hot water. Let steep for 30 minutes to 1 hour, or until it’s barely warm, preferably cold.
4. Then add the sliced cucumber and lemon. Add more cold water if needed to fill the pitcher. Cover and let the cucumber, lemon and ginger infuse for at least 2 hours. Then you can transfer to the fridge. Strain and drink whenever you need.
