1. In a pot, combine pork belly, salt, peppercorn, bay leaves, soy sauce, garlic, and water. Bring to boil. Let it cook until meat is fork-tender.
2. Remove the pork belly from water and let the excess water completely drain. Transfer to a plate and then rub 1 tablespoon of salt all over the meat. Put in the fridge overnight to dry out.
3. Cut in cubes, about an inch thick. Heat oil in a wok or pot over medium-high heat. Once the oil is hot, fry each side of a cut for 5 minutes while sprinkling the skin with ice-cold water and letting it crackle from time to time.
4. Remove from hot oil and transfer into a plate lined with kitchen paper towel to remove excess oil. Serve while still hot with your fave dipping sauce!

1. Make vertical slits (don’t cut through!) around the edges of the skin of the pork belly (see video). It’s important that the pork can be laid flat on the wire rack and that the skin is side up throughout the broiling process.
2. Place pork belly, water, salt, and whole black pepper in a large pot. Bring the liquid to a boil, then turn the heat down to medium and gently boil the pork for 1 hour to 1 1/2 hour or pressure cook (see note 3) for 20mins until fork-tender.
3. Remove pork from the pot and place in a wire rack with a baking sheet under. Let it cool. Meanwhile, pre-heat the oven to 250c /482f for 20 mins.
4. Rub salt on the sides and bottom of the meat. The amount depends on how salty you want the pork to be. And then finally, sprinkle salt evenly on the skin (see video).
