To prepare this delicious Easter recipe, start by washing the tomatoes, onions, celery, and carrots under running water. Using a clean chopping board, dice the celery and carrots and chop up the onions and tomatoes. Keep them aside for later. Preheat the oven at 160 degrees Celcius.
2. Now, take flour on a large plate and season it with salt and pepper. Place the lamb shanks on it and toss it to coat evenly on all sides. Then, take a skillet over medium flame and heat olive oil in it. When the oil is hot enough, add the coated lamb shanks and cook till it turns brown in colour. Set it aside.
3. In the same skillet, pour more oil and add the chopped onions, dices celery and carrots along with bay leaves. Cook till they turn tender and add the garlic cloves. Cook them for another minute.
4. When the vegetables are cooked, turn the flame to high and add the dry red wine to the skillet. Stir the mixture to form a gravy and when the wine has evaporated, add the chopped tomatoes along with the cooked lamb.
