Lamb is tasty, nutritious and much cheaper and easier to cook than it’s often given credit for. Need a little extra convincing?
Heat a large rondeau (or Dutch oven) with the olive oil over medium-high heat. Add the lamb with a liberal pinch of salt and cook until brown, about 4 minutes. Meanwhile, combine the carrots, celery and onions in a food processor and pulse to chop finely. With a slotted spoon, remove the browned lamb from the pan and set aside.
If you’d rather use beef mince, or if you have some leftover beef, then that’s OK too – this recipe works equally well with beef or lamb. The quantity I give below makes enough bolognese sauce for two meals for a family of 4.
You'll want to cook it on a gentle simmer if you're cooking it for longer. If you are using leftover roast lamb, add this in now and gently heat it up before serving the bolognese with the cooked spaghetti, grated Parmesan and chopped parsley.
