1. Rinse and clean the romaine lettuce (or green leaf lettuce) well. Drain well. Set aside for later.
2. Peel and slice garlic cloves as close to possible to paper-thin. Set aside.
3. Place 1 tbsp of sesame oil into small sauce dishes for each person. Add ½ tsp of salt to the side of each dish with the sesame oil. Add ¼ tsp of ground black pepper on top of the sesame oil.
4. Place a pan on medium-high heat. Cook the pork belly slices until well-done. (Note: If you have a portable burner where you can cook this pork belly tableside to make it more of an experience, then feel free to do that. However, you can also just cook the pork belly on the stove in a frying pan as well as we have done.)
