1. Make the marinade. Combine all ingredients for the sugar free teriyaki marinade in a gallon sized zip top bag.
2. Marinate the beef. Add the sliced beef to the marinade and massage to thoroughly coat the beef. Place the bag in the fridge and allow the beef to marinate for 8-24 hours.
3. Preheat the smoker. Preheat your smoker (or oven) to approximately 170-175 degrees F. Follow any preheating or preparation instructions if using a dehydrator.
4. Smoke the jerky. Take the meat out of the marinade and place it directly on the grill grates, jerky rack, or cooling rack and smoke/cook for 2-3 hours or up to 5 hours. Flip the jerky after the first hour, and check to be sure your jerky is drying evenly. You may need to move pieces around on the grates if some are dying faster than others. You are looking for jerky that is firm and still slightly pliable, but not soft and squishy.

1. Preheat your oven to 225 degrees F. Line two large rimmed baking sheets with parchment paper.
2. Unfold the steak and place it on a cutting board. Using a sharp knife, cut the beef crosswise, against the grain (so that you sever the tough, thin fibers that you can see on the steak) into 2-inch-wide strips.
3. You want the strips to be around 1/8-inch thick, so if they are thicker, slice each strip lengthwise into two thinner, 1/8-inch-thick strips. This is easier to do if the meat is partially frozen.*
4. Allow the meat strips to rest at room temperature for about 15 minutes so that they fully defrost and become more pliable. Then arrange them in a single layer on a cutting board, cover them with cling wrap, and use a meat pounder to pound them so that they are thinner and more even in thickness.

1. Prepare: Freeze flank steak for 15 minutes (for easier slicing). While waiting for flank steak to firm up, stir together sweetener, black pepper, paprika, coriander, and salt in large bowl until well-mixed. Prepare 2 baking half sheets set with wire racks (Note 4). Set them aside.
2. Cut Beef: Remove flank steak from freezer. Pat dry with paper towels, and trim off excess fat. Slicing against grain, cut into strips as thin as possible, about 1/8 inch thick (Note 5). Add beef strips to bowl with spice mixture, tossing until evenly coated.
3. Refrigerate: Arrange strips on prepared racks in single layer, barely touching each other. Refrigerate uncovered overnight, or for at least 12 hours and up to 24 hours.
4. Bake: Remove baking sheets from refrigerator 30 minutes in advance of baking. Position oven racks to lower-middle and upper-middle positions, and preheat oven to 225 F. Bake uncovered for 1 hour. Flip beef strips, and return baking sheets to oven, switching upper and lower positions. Bake uncovered until beef is dark and firm to touch but still pliable, about 1 hour.
