1. Get started. Pre-heat oven to 400 degrees. Grease a rimmed baking sheet with olive or avocado oil. Cut veggies and sausage as indicated. Place veggies on rimmed baking sheet and drizzle with a tablespoon of olive oil. Mix veggies and oil with hands until veggies are lightly covered in oil. Season with salt and pepper. Add sliced sausages to pan and disperse veggies and sausage so there is some space between them.
2. Bake and finish: Place pan in oven and let roast for 15 to 20 minutes (it takes us 17 minutes), flipping the sausages and veggies after 10 minutes (midway point). When done, remove pan from oven and sprinkle crumbled feta over the top of veggies and sausage. Plate and serve.
