1. Cook riced cauliflower in microwave according to package directions.
2. Brown ground beef drain and set aside. (I brown mine in advance and freeze in 1 lb portions.)
3. In a large saucepan, saute onion, and minced garlic in one tablespoon of butter until translucent.
4. Add the other 2 tablespoons of butter and the riced cauliflower to the onion/garlic mixture and saute for 5 minutes stirring so that it doesn't stick.

1. Brown ground beef, onions, green peppers (optional) and minced garlic together in a large saucepan.
2. Drain (if desired) then return to saucepan.
3. Add all other ingredients to the ground beef mixture and bring to a boil. If you decide to add the optional butter you would add it now. It will add a little extra fat and flavor to the chili.
4. Reduce to low heat and simmer uncovered for 1 1/2 to 2 hours or until chili reaches desired thickness.

5. Fry one pound of bacon in a skillet, then set aside on a paper towel to drain. Crumble when cooled.
6. In a small bowl, combine all your ingredients except the ground beef and mix together well.
7. Then add those ingredients to a larger bowl along with your ground beef. Mix until just combined. You don’t want to overwork the ground beef. (The best way is to use your hands!)
8. Grab a handful and form into a ball. Then pat down to shape each into patties. To make them cook more evenly form the patty leaving a small hole in the center. As they cook, the hole will close up.
