Käsekuchen is the traditional German cheesecake. It is usually prepared with eggs, cream, sugar and a mixture of cheeses. Traditionally, cottage/quark cheese or, failing that, ricotta cheese is used. These are low-fat cheeses that give this cheesecake its light, grainy texture. Quark cheese is very difficult to obtain in North America.
Quark cheesecake ends up very light and fluffy in texture but still extremely creamy. Another difference – depending on which cheesecake recipe you follow – is the crust. For North American cheesecake, people often use a soft graham cracker crumble for the crust. German cheesecakes are usually a simple crust made with butter and flour.
Preheat the convection oven to 350 F (175°C). Spread the mixture over the chilled shortcrust pastry. Bake the käsekuchen on the bottom rack for about 1 hour. First let the käsekuchen rest in the switched off oven for 30 minutes, then take it out and let it cool to room temperature.
