Introducing the third week of the Julia Child celebration and this week is featuring Julia’s classic chicken with red wine and mushrooms, or commonly known as, coq au vin as well as chicken bourguignon. And I have to be brutally honest with you, when I first read the recipe, I was reluctant to make this traditional coq au vin recipe.
There’s a handful of key ingredients in coq au vin (bacon, onions, mushrooms, butter, and red wine), that create that umami (savory) flavor when layered together one at a time. The only ingredient I added that wasn’t in the original recipe was carrots, for their added texture and color.
Place a lid on the pot and simmer for 25 to 30 minutes, until the chicken is cooked through, the potatoes are soft, and the sauce has slightly reduced. While the coq au vin is cooking, in a wide skillet, add 1 tablespoon of butter and the olive oil over medium heat.
