1. To make the cream layer, prepare the gelatine powder by sprinkling it over the water in a small bowl and whisking with a fork. Set aside.
2. Add the heavy cream, sweetener, and vanilla extract to a small saucepan. Bring to the boil, then remove from the heat and quickly whisk the gelatine into the cream until it has full dissolved. Note: this layer isn't particularly sweet, so if you prefer it sweeter you might like to double the amount of sweetener used.
3. Divide the cream mixture between four bowls or glasses. Let cool, then transfer to the fridge for at least an hour or until set.
4. To make the peach layer, prepare a packet of Simply Delish Peach Jel Dessert according to the pack instructions.
