1. In a small pot, mix together soy sauce, tsuyu, sake, sweet rice wine, and honey. Add the garlic, ginger and bring to boil. Reduce the heat to low and simmer for 5 minutes. Discard the garlic and ginger; set aside.
2. Heat oil in a large heavy bottom skillet over med-high heat. Add the onion and cook until they are just softened, about 2-3 minutes. Transfer to another plate; set aside.
3. Add the pork belly to the hot skillet and let them sear for 1-2 minute, then turn to the other side and cook for another 1 minute.
4. Pour the sauce over pork belly and let the sauce bubble. Reduce the sauce until it thickens, about 2-3 minutes. Remove from the heat.

2. Next, take your pork block and cut it into thick slices. (Approx 1/2cm or 1/4 inch)
3. Now you can make the caramel sauce. Add 1 tbsp of sugar and 1 tbsp of water to a cold pan (I recommend using a silver or white pan so you can see the caramel change colour. Don't use non-stick as the caramel might damage non-stick surfaces.)
4. Add the pan to a medium heat and allow the sugar and water to bubble, do not mix or interfere with the caramel.
