DirectionsStep1Preheat your oven to 190oC/180oC Fan/375oF and line two baking trays with parchment paper and leave to the side.Step2Mix together the unsalted butter and both granulated and light brown sugars until light and fluffy and thoroughly combined.Step3Add the vanilla bean extract and the beaten egg, and mix again briefly.Step4Add the cocoa powder, self raising flour, bicarbonate of soda, baking powder and sea salt and mix until a thick paste/cookie dough is formed.Step5Fold through the chopped up Toblerone and either the 50g chopped almonds OR extra 50g chocolate chips.Step6Using a cookie scoop, scoop the mixture onto the trays and make sure they are suitable spread out so they stay separate!     1. Blitz the biscuits in a food processor to a small crumb, add the melted butter, and pulse a few times until it is combined well.
    2. Melt the 200g Toblerone in a bowl over a pan of gently simmering water, stirring gently or microwave in short bursts until fully melted – leave to cool slightly whilst doing the rest.
    3. Remove the cheesecake from the tin, and decorate with some melted chocolate, whipped cream (Double Cream & Icing Sugar), and some extra Toblerone and Sprinkles!
