In our jam recipe, strawberries are the only sweetener involved, and therefore the carbohydrate content is really minimal. You get a perfect 3 grams of carbohydrates only together with 1 gram of Fiber for a portion. This brings you to a total of 2 grams of net carbs for two tablespoons of homemade sugar-free strawberry jam.
It takes about 30 minutes from start to finish and you only need a few ingredients. Buying some strawberries, fresh or frozen is better than perusing the isles for keto or low carb strawberry jams, IMHO. Well, it doesn't exactly taste like the store bought sugar and carb laden version but comes pretty close to it.
Ideas for using sugar-free strawberry jam: swirl into cheesecakes. slather between cake layers. sandwiched between sugar cookies. stirred into yogurt. stirred into ice cream.
I sprinkled the gelatin over the lemon juice and let it “bloom”. Then I tore the pieces up and added them to the hot strawberries once they had cooked.
