4. Halve the aubergines lengthways and blanch in the water, covered, for 5 minutes, then lift out, leaving the water on the boil.

3. Take a piece of kitchen paper and dab off the liquid from both sides of the aubergine.
4. Beat the eggs in a shallow bowl. Blitz the focaccia into fine crumbs in a food processor and pour on to a plate.
