DirectionsStep1Empty tomatillos into a pot about 10 litres / quarts in size or larger. You can start warming the pot slowly.Step2Wash the jalapeno peppers, stem them, but leave seeds in.Step3Slice peppers into rings or whiz coarsely in food processor. Add to pot.Step4Wash and peel the onions, then cut into slices. Add to pot.Step5Wash, peel and mince the garlic, add to pot.Step6Wash and chop the coriander. Add to the pot.Step7Add the apple cider vinegar, bottled lime juice, and the water.Step8Crank heat on pot and bring to a boil.Step9Boil steadily, though not crazily, uncovered for an hour. Stir periodically.Step10After that hour, lower heat to a simmer and let cook uncovered for another additional hour. Stir periodically.Step11Turn stove burner off. Remove from heat and let cool a bit so that it's safe for the next step.Step12(At this point, you could even refrigerate the mixture in tubs overnight and pick up the next day.)Step13Put mixture through a blender in small batches, blending each one for about 2 minutes per batch so that it's a totally smooth puréed sauce.Step14When blended mixture is all back in the pot, crank the heat to bring it all back to a boil.     1. Wearing rubber gloves, slice your jalapenos into 1/8" thick rounds. Discard the stem end.
    2. If you will be water bath canning these pickled jalapenos, then prepare canner, jars, and lids. Wash your jars and lids. Sterilize your jars in a large pot filled with water. Bring the water to almost a simmer over medium heat. Keep the jars in the simmering water until you are ready to fill them. Use a jar lifter to remove them from the water when you are ready to fill them, dumping the hot water back into the pot when you remove each jar from the water. Right before you are ready to can, put your lids in a small pot or bowl with hot, but not boiling water. Put some additional white vinegar in a small bowl, alongside a clean washcloth or paper towel.     3. Combine the vinegar, water, & sugar in a saucepan and heat until just before it starts to boil.
