1. Mix together the yoghurt and spices and lemon juice for the chicken together in a bowl then add the chicken and marinade in the fridge overnight (or 4 hours at least)
2. Spray a deep frying pan over a medium high heat, add the onion and fry until softened, add the garlic, ginger and chilli powder and fry for a further 30 seconds. Add in the butternut squash and stock, bring to a boil, cover and simmer until butternut squash is soft (approx 12-15 minutes).
3. Transfer to a blender with the 250g of passata and blend until smooth
4. Melt the butter in the frying pan over a medium high heat, add the chicken in the yoghurt marinade to the pan using tongs in an even layer (if your pan is not big enough) do this in two batches, using 1 tablespoon of the butter at a time.

1. In a large lidded saucepan, heat the ghee or coconut oil over a medium-low flame. Add the turmeric, cumin, garam masala, ginger and tomato paste. Cook for 2 minutes, until a fragrant paste forms.
2. Carefully stir in the coconut milk, chicken stock, lemon juice and salt. Bring the sauce to a simmer and cook over medium-low heat until slightly reduced and golden in hue, 10 minutes. Fold in the chicken and continue to simmer over medium heat, stirring occasionally, for 10 minutes. Place the lid on the pan simmer for another 5 to 10 minutes, until the chicken is tender enough to break apart with your spatula. Serve immediately with the cilantro as garnish.
