Ina Garten’s mashed potatoes with lemon is a fun spin on mashed potatoes and a recipe that could work with several varieties of white and yellow potatoes. I think it might be worth adding a little extra salt given the lemony flavor but this was a well-received side dish for dinner.
Lemon zest. That’s it. That’s what makes Ina Garten’s dish — which she sophisticatedly calls “ Puréed Potatoes with Lemon ” — a game changer. Garten’s recipe is all of four ingredients: Yukon Gold potatoes, whole milk, unsalted butter and lemon zest.
Ina’s mashed potato recipe starts as most do — with you peeling and cubing potatoes, then adding them to a pot with salted cold water. (The instructions actually don’t specify the amount of kosher salt used, so I added a couple of tablespoons.) Water boils, potatoes simmer until tender, and milk and butter heat separately.
But first, it is worth noting that Garten doesn't call them mashed potatoes. Per a Today article, Garten instead calls this recipe, which is based on a dish she ate in Paris, "Puréed Potatoes with Lemon."
