1. In a large skillet heat the pan over medium-high heat until it's hot. Add a drizzle of olive oil, which is about 1 Tbsp.
2. Place the Italian sausages in the pan and brown them on both sides for about 3 minutes on each side. The sausages will not be cooked through yet on the inside.
3. Turn the heat down to medium-low. Add a 1/2 cup of water to the skillet and cover the pan. Simmer the Italian sausage until it's cooked through and reaches an internal temperature of at least 160F, which will take about 10-12 minutes. Discard any remaining water in the pan.
4. Enjoy! Serve with sauteed peppers and onions, roasted vegetables, salad, pasta, polenta, or rice.

1. Crush the "leafy" basil, sage, oregano, pepper flakes and fennel seed in a spice grinder or mortar and pestle until ground or they are lightly powdered.
2. Mix the ground spice in with all the other spices in a small bowl and whisk well to remove any clumps.
3. Sprinkle the spice mixture and remaining ingredients over the ground meat and knead well until the spices are evenly distributed throughout the meat.
4. Refrigerate overnight to let the spice flavors infuse into the meat. If you try to cook the meat immediately, it will have very little flavor as the spices need time to develop.
