Category: SweetsServings: 4Total Time: 15 mins1. Place the sugar in a high-powered blender. Blend until it is super fine, about 1 minute. Weigh out 1 pound (454 grams), then reserve any remainder for another use.
2. Combine the egg whites, cream of tartar, and salt in the bowl of a stand mixer fitted with the paddle attachment. Beat on low speed until smooth, then, still on low speed, stream in the sugar. Once all of the sugar has been incorporated, increase the speed to medium-high and continue to beat until a frosting-like consistency is achieved, about 4 minutes. If you’d like a thinner frosting, beat in a little water (or rum).
3. To color the icing, divide the icing between small bowls. Add gel-based food coloring to each portion of icing and stir well to combine. Start with only a drop or two of each color, adding more as desired.
4. Use immediately or store in an airtight container overnight. If you have stored the icing, it may separate overnight; whisk it smooth before using.

Frequently Asked Questions

How to make keto royal icing?

This keto royal icing is perfect for piping! In a medium-size bowl, combine the swerve confectioners sweetener, cream cheese, and heavy whipping cream. Use a hand mixer to blend these ingredients on medium speed until it becomes thick. This will table about 2 to 3 minutes. Spread or drizzle on your favorite keto dessert.

How do you thicken royal icing?

To thicken royal icing, add more powdered sugar, 1 Tbsp. at a time. Thicker icing is great for piping outlines, and even thicker is ideal for flowers and intricate shapes. If you're using royal icing to flood cookies, it should be on the thinner side. Thin your icing by adding more warm water, 1 tsp. at a time.

How do you make your christmas royal icing taste better?

When it comes to classic Christmas royal icing, I find the stuff way too sweet and chalky. I make my own powdered sugar in a blender, then add cream of tartar (aka tartaric acid) and kosher salt into the mix to bring a more balanced flavor to my icing.

How do you make confectioners sugar icing?

Add confectioners' sugar gradually and mix on low speed until sugar is incorporated and mixture is shiny. Turn speed up to high and beat until mixture forms stiff, glossy peaks. This should take approximately 5 to 7 minutes. Add food coloring, if desired. For immediate use, transfer icing to pastry bag or heavy duty storage bag and pipe as desired.
