Cuisine: AmericanTotal Time: 55 minsCategory: DessertsCalories: 200 per serving1. Combine cream, sweetener, and lemon zest in a medium saucepan and bring to simmer over medium heat. Continue to simmer, stirring frequently to dissolve sweetener. If mixture begins to boil over, briefly remove from heat. Cook until mixture is reduced to 2.5 cups, 8 to 12 minutes.
2. Off heat, stir in lemon juice. Let sit until mixture is cooled slightly and skin forms on top, about 20-30 minutes. Divide mixture evenly among 4- 6 individual ramekins or serving glasses.
3. Refrigerate, uncovered, until set, at least 3 hours. Once chilled, possets can be wrapped in plastic wrap and refrigerated for up to 2 days. Unwrap and let sit at room temperature for 10 minutes before serving. Garnish possets with additional berries and serve.
4. Place the blueberries (frozen or fresh) and place in a microwaveable bowl and stir together with 1 tbsp of allulose. Microwave on high for 1-2 minutes or until blueberries just begin to release their juices and begin to breakdown. Carefully pour about 1/2 tsp of the blueberry juice into a small dish. Whisk in 1/8 tsp of xantham gum and 1 tsp lemon juice and stir the mixture into the blueberries. Taste the mixture and add additional 1 tbsp of allulose if needed.

2. Put all the ingredients into a medium saucepan and give it a good whisk to combine and break up the yolks. Let the mixture sit for 5 minutes, then stir again to make sure the cornstarch is dissolved. Don't worry about tiny lumps, they'll dissolve as the pudding cooks.
3. Cook over medium heat, stirring almost constantly with a whisk at first, then switching to a silicone spoonula as it thickens. You want to avoid the pudding scorching on the bottom or sides of the pan, so modulate the heat and keep stirring.
4. Just as the pudding comes to a boil, it should be thick and glossy. Remove from the burner just as the first large bubbles surface, don't let it continue to boil.
