Dump the crushed pork rinds into a large bowl and then grate half of a small onion over top of the pork rinds. *see note 2

1. Combine ground beef, garlic, ⅓ cup bbq sauce (reserve the rest for later), egg, half and half, crushed pork rinds, salt, and pepper in a large mixing bowl and mix together with your hands.
2. Form into 6 even sized patties about ¾ inch thick. Brush one side of the burgers with ½ of the reserved BBQ sauce.
3. Place patties, sauce side down, on a preheated grill sprayed with non-stick cooking spray. Brush the rest of the BBQ sauce onto the burgers. Cook for 4 minutes and then flip over, and top each patty with one slice of cheese. Grill for an additional 3-5 minutes, to the doneness of your liking.
4. Wrap the grilled patties in butter lettuce or serve as is on a plate with your favorite low-carb burger toppings.
