  • Most pudding is sweetened with sugar and thickened with cornstarch. While it’s easy to switch out the sweetener, the thickener is a bit more challenging. In the pudding recipes I’ve created in the past, I’ve used chia seeds to thicken puddings. This works well in my Low-Carb Strawberry Cheesecake Chia Pudding and my Low-Carb Coconut Matcha Chia Pud

    Calories: 431 per servingCategory: Dessert1. Pour 1/4 cup heavy cream into a small bowl. Sprinkle the gelatin powder on top (don't just dump it in), and whisk together immediately. Set aside.
    2. In a medium saucepan over medium-low, stir together the remaining heavy cream, powdered sweetener, cocoa powder and sea salt. Heat, whisking constantly, for about 5 minutes, until the mixture is smooth and bubbling near the edges.
    3. Remove from heat. Stir in the vanilla extract.
    4. Add the gelatin, which will be thick, to the pan. Whisk until smooth and dissolved.
