  • Creamy, crispy, and deeply comforting, this recipe is as much about what it is as what it isn’t. What it is: 1. Fresh. 2. Luscious, velvety, and rich in the center (just like my Homemade Scalloped Potatoes). 3. Golden, crispy, and addictive on top (just like my Butternut Squash Casserole). 4. Complex enough to keep you interested (similar to my Spi

    1. Position racks in upper and lower third of oven; preheat to 425 degrees F.
    2. Toss green beans in a large bowl with 1 tablespoon oil until well coated. Divide between 2 baking sheets and spread in an even layer. Roast, stirring once and rotating the pans top to bottom about halfway through, until tender and beginning to brown, 20 to 25 minutes.
    3. Meanwhile, heat 1 tablespoon oil in a large saucepan over medium heat. Add onion and cook, stirring frequently, until very soft and golden brown, 5 to 8 minutes. Add flour, salt and pepper; cook, stirring, for 1 minute more. Add milk and continue to stir, scraping up any browned bits. Cook, stirring, until the sauce bubbles and thickens enough to coat the back of a spoon, about 4 minutes. Remove from the heat. (See Tips)
    4. When the green beans are done, remove from the oven. Preheat the broiler.

    1. Preheat oven to 425 degrees F. Line a large baking sheet with parchment paper and spray with nonstick cooking spray. Set aside.
    2. Place sliced onions in a large bowl, drizzle with 1 tablespoon of olive oil then add in flour, panko bread crumbs, garlic powder and salt. Use your hands to toss to combine, then place onions onto prepared baking sheet and bake for 15-25 minutes, using a tong to toss the onions every 8-10 minutes or so, until nice and crispy.
    3. Once done cooking, set onions aside. Reduce the heat in the oven to 350 degrees F.
    4. While the onions are cooking, bring a large pot of salted water to a boil. Add green beans in two batches, cooking for about 2-3 minutes per batch. I like to remove the green beans from the water with metal tongs and transfer to a large bowl, then repeat with additional green beans. Set aside.
