    My personal low carb diet starter guide:

    1. Keto Cheeseburger Casserole. While many casseroles rely on starchy components like pasta and rice, this dish will convince you can completely forego the carby additions while still maintaining the heartiness.
    2. Crunchy Cheese Ranch Pinchos. Pinchos are bite-sized snacks typically served in the Basque region of Spain. And we love the idea of bite-sized food so much, we decided to make a keto version of a pincho, featuring a creamy cheese ball rolled in a finger-licking coating of bacon, nuts, and chives.
    3. Keto Chips & Guacamole. Guacamole is the perfect keto dip since it's high in good fats from heart-healthy avocados. While traditional tortilla chips for dipping aren't an option on keto, we love to use parmesan crisps or pork rinds as a crunchy guac vessel.
    4. Keto Charcuterie Platter. Making a keto charcuterie platter makes a lot of sense, because cheese and meats are both allowed on the high-fat, low-carb diet.
    5. Buckeye Fat Bombs. Buckeye cookies are balls of peanut butter fudge dipped in chocolate. To turn them keto, we employed some simple ingredient swaps. Instead of powdered sugar, we are using a powdered keto-approved sweetener like Xylitol or Stevia.
    6. Keto Waffles. If you spend any time over on Pinterest, you may have seen the term "chaffle" floating around. If you haven't, let me enlighten you. The "chaffle" is a waffle made with two very simple ingredients: Cheese and eggs.
    7. Smoked Salmon on Cucumber Slices with Lemon-Avocado Sauce. Once you eat salmon this way, there really is no going back. In this keto snack recipe, you'll find the star of the dish is the "everything" seasoning it's topped with.
    8. Smoky Spanish Beef Stew with Olives. This tasty meal deserves a nice medium-bodied red wine, like the smooth Tepranillo or Garnacha. However, if you'd like to keep the meal as close to the keto diet as possible, go for a dry red wine, like a Merlot, Cabernet Sauvignon, or Chardonnay.
    9. Thai Scallop Curry with Zucchini Noodles & Shiitake Mushrooms. This recipe will help make you more confident in the use of coconut oil, coconut milk, and curry powder, which are all terrific keto diet meal staples.
    10. Pecorino-Romano Crisps with Thyme. Not only is this a much healthier alternative to store-bought junk food, this recipe is so easy to make and to personalize.
