1. In a small bowl, mix together the olive oil, garlic, salt, pepper, rosemary, and thyme.
2. Rub the olive oil mixture all over the lamb. Place the leg of lamb, flat side down and fat cap up, in a rimmed roasting pan on a greased rack. Allow it to rest on the counter, at room temperature, for 1 hour.
3. Preheat your oven to 425 degrees F.
4. Insert a meat thermometer into the thickest part of the meat without allowing it to touch the bone. Set the thermometer to 135F (medium-rare). Roast the lamb for 15 minutes in the preheated 425-degree oven.
