1. In a medium-size pot, bring 1 cup of short-grain brown rice and 2 cups of water to a rolling boil. Cover and reduce heat to low and let simmer for around 40 minutes or until all water has absorbed.
2. Heat 2 tablespoons of olive oil in a skillet on medium/high heat. Add red onion to the pan and sauté for 3 minutes. Then, add garlic and the red pepper and cook for an additional 2 minutes.
3. Then, add the frozen vegetables and sauté for an additional 3-4 minutes.
4. Create a pocket in the middle of your pan. (as seen in the photo in the post). Crack two eggs and scramble with a fork. Cook egg for about a minute and then mix with the rest of the veggies.

1. Preheat oven to 400 degrees F (204 C) and line a baking sheet with parchment paper (or lightly grease with non-stick spray).
2. In the meantime wrap tofu in a clean, absorbent towel and set something heavy on top (such as a cast iron skillet) to press out the liquid.
3. Once the oven is preheated, dice tofu into 1/4-inch cubes and arrange on baking sheet. Bake for 26-30 minutes. You’re looking for golden brown edges and a texture that’s firm to the touch. The longer it bakes, the firmer and crispier it will become, so if you’re looking for softer tofu remove from the oven around the 26-28 minute mark. I prefer crispy tofu, so I bake mine the full 30 minutes. Set aside.
4. While the tofu bakes prepare your rice by bringing 12 cups of water to a boil in a large pot. Once boiling, add rinsed rice and stir. Boil on high uncovered for 30 minutes, then strain for 10 seconds and return to pot removed from the heat. Cover with a lid and let steam for 10 minutes*.

1. First, rinse the rice a couple of times and allow it to sit in lukewarm water for 30 minutes. I always do this prior to cooking the rice, as it cuts down on cooking time.
2. Drain rice. Heat oil in a sauce pan and saute the onions until soft and translucent. Add the rice and stir for a minute. Next add the garlic and the carrots. Stir just to combine the ingredients. Pour in the stock and soy sauce, lower heat, cover and allow to cook on low for 10 minutes.
3. After 10 minutes, check on the rice. If yours is still a bit hard and there's no liquid left, keep adding 1/3 cup of stock until the rice is cooked all the way. Different types of rice will cook differently and the cooking temperature will affect the amount of time it takes. If you find yourself in a situation where the rice is done, but you still have liquid in the pan - open the lid and allow it to cook off.
4. Once the rice is cooked, turn heat off and mix in the frozen vegetables.
