1. Melt the chocolate with the coconut oil in the microwave in 20-30s intervals, until completely melted. Stir in between to speed this process up. It actually took me one interval of microwaving to melt the chocolate.
2. Stir in the peanut butter until well combined.
3. Break/Crumble the rice cakes and add them to the mixture.
4. Add a tsp of almond flour and mix it all together until all the rice cakes are covered with the chocolate.

Refrigerate until firm and set (at least 1 hour, ideally 4 hours or overnight). Store in an airtight container in the fridge for up to a week, or freeze for up to 3 months. Enjoy!
