1. Chop chocolate into small pieces and melt it in a bowl over simmering water (double boiler). Set aside.
2. Open can of coconut milk and scoop the solid cream into a bowl, being careful not to mix with the water in the bottom of the can.
3. Using a stand or hand mixer, whisl the coconut cream, maple syrup and vanilla just until ingredeitns are combined.
4. Pour mixture into the bowl with the chocolate and whisk until the chocolate is fully and incorporated into the coconut cream mixture.

3. Temper the egg yolk in a medium bowl, by slowly whisking in some of the hot milk mixture to the egg yolk until warmed and tempered. Whisk the egg yolk mixture back into the milk mixture.
4. Whisk in the melted chocolate and vanilla. Continue to whisk the mixture while simmering on low for 15-20 minutes until thickened.
