2. In a large zip lock bag, toss the potato wedges with 3 T olive oil and 1 t dried oregano, salt and ground pepper.
3. Spread the potatoes in an even layer in a 13 x 9″ pan. Try not to crowd or the potatoes will take longer to turn golden. Bake, turning over after about 15 minutes cooking until the edges are beginning to brown and the potatoes can be pierced with a fork. They will finish cooking with the chicken.
4. While potatoes roast, prepare the chicken. Season the chicken well with salt, pepper and oregano.
