This Harissa Chicken Traybake is a super easy recipe with moist roast chicken with spicy, earthy, fruity, sweet and sour flavours. It hits all the right spots, and is perfect with rice, couscous, potatoes or bread.
Mix half the harissa paste with half the lemon juice, the yogurt and some seasoning in a bowl, add the chicken thighs and toss to coat. Set aside while you prep the veg.
