1. Gather all the ingredients.
2. Thinly slice ginger into 1/8 inch slices and set aside.
3. Fill stove top pot with enough water to completely submerge entire pork belly. Add Japanese sake, sliced ginger, salt and bring to boil. Once boiling, add the entire pork belly into the stove top pot. Bring heat down to medium-low, partially cover and cook for 40 minutes.
4. In the meantime finely dice jalapeno (with seeds), grate garlic with a grater or a garlic press and place into a dipping bowl. Add Soy Sauce, mix well, and set aside.

1. Dry skin overnight: Place pork belly on a plate. Pat skin dry with paper towels. Leave uncovered in fridge overnight to dry out the skin. (If you don't have time, pat the skin dry as best you can).
2. Preheat oven to 140°C/285°F (120°C fan).
3. Season flesh: Drizzle flesh (only) with 1 tsp oil. Sprinkle over 1/2 tsp salt, the pepper and fennel powder. Rub all over the flesh, including on the sides, being sure you get right into all the cracks and crevices.
4. Wrap in foil: Place 2 pieces of foil on a work surface. Put the belly in middle of foil, skin side up. Fold the sides in to enclose the belly, forming an open box, pinching corners to seal tightly and make it as snug as possible. Place meat on a tray.

2. Heat up a large sauté pan or a wok over medium-low heat for about 5 minutes. Add oil and 2 tablespoons brown sugar. Stir gently until sugar is dissolved in the oil.
3. Meanwhile, pat the pork dry with additional paper towels. Once the sugar is melted, increase heat to medium and carefully add pork into the pan. (The oil might pop due to excess water from the pork. Don’t stay too close to the stove and be careful.) Brown all sides of the pork. Flip and let it brown undisturbed, about 30-45 seconds on each side.
4. Once the pork is browned, add dark soy sauce into the pan, stir to combine. Let it cook for 5 minutes.
