These grilled shrimp skewers are so quick and easy to make and wonderfully flavored with a lemon and herb marinade. Place the olive oil, lemon juice, salt, pepper, oregano, paprika and garlic powder in a large bowl; whisk to combine. Add the shrimp to the bowl and toss gently to coat evenly with the marinade.
If using wooden skewers, pre-soak for 30 minutes. Thread shrimp onto skewers, about 5-7 per skewer. In a small bowl, add olive oil, garlic, lemon juice, oregano, salt, pepper and whisk (I use a brush). Brush each shrimp skewer on each side with the glaze and place onto a platter. Preheat grill on medium heat and lightly oil the surface.
The sauce: I use a simple combination of olive oil, garlic, lemon juice (lime would also work), oregano, and salt and pepper to flavor the grilled shrimp kabobs. Keep reading below (after the recipe how-to) for more information on recipe add-ins and sauce variations!
3 If using wooden skewers, place 12 skewers (about 12 inches long) in a 9-inch by 13-inch dish filled with water. Preheat a grill or grill pan to medium-high heat.
