3. While the kabobs cook, make the avocado tzatziki. Place the avocados, minced garlic, lemon juice, red wine vinegar, and 1/2 the dill in a Vitamix or high powered blender and blend until smooth. Add to a bowl and stir in cucumber, remaining dill, and salt and pepper to taste.
4. Dip kabobs in the avocado tzatziki and enjoy!⁠
