Toss the remaining rosemary in the pan, as well as the 2 remaining garlic cloves, cut into pieces.
3. Drizzle the lamb with olive oil and season with kosher salt and pepper all over on top as well.
4. Pour the wine in the pan along with enough water to cover the bottom of the pan by ¼-inch (about 1 cm) in height.
