4. For the spinach salad: Chop 2 cups of fresh spinach. Combine 2 Tbsp. olive oil, 1 Tbsp. vinegar, 2 Tbsp. Mezzetta Peperoncini brine, 1/2 tsp. sugar, and a pinch of salt and pepper to a small bowl. Whisk to emulsify. Add desired amount of dressing to the spinach.
