Say hello to my gluten free triple chocolate cookies recipe! It's also dairy free and low FODMAP too and easy to make at home. 120 g hard margarine (I've always used the hard block of Stork which is dairy free - if you don't need dairy free you could use butter)
Chocolate chip cookies, meringues, lemon drops, macaroons, and so many other tempting cookies are still part of my diet, despite being dairy and gluten-free. With just a little creativity in the kitchen, even traditional food eaters can’t tell the difference. Best of all, you don’t need to do the experimentation yourself.
While cookies are cooling, melt 1-2 tablespoons coconut oil in a small saucepan over low heat. Add in 1/2 cup of sugar-free chocolate chips and stir until melted smooth. Dip cooled cookies into the chocolate to coat. Optional: sprinkle with sugar free chocolate shavings, sprinkles, or toppings of your choice (like this caramel syrup ).
All you need to use are dairy free chocolate chips – in the photos I used these Moo Free Chocolate Chips. Also, you’ll need to use a hard margarine instead of butter – I used a block of Stork. Both of these are gluten free too obviously! This is one of those recipes that makes barely no difference whether it’s dairy free or not.
