The main difference in looks is the kimchi is reddish because of the sauce with white and green patches of cabbage and sometimes yellow/white radish, (daikon), while the sauerkraut is off white. The taste of kimchi is spicy —even the ‘mild’ version— while sauer kraut is, well, like the name states, ‘sour cabbage.’
