1. In a medium bowl, toss together raw shrimp, salt, pepper, minced garlic and dried parsley.
2. Spray medium saucepan with olive oil spray and place on medium-high heat. Add raw shrimp and cook until fully pink. Transfer shrimp to plate/bowl.
3. Turn heat down to medium and add olive oil and vegetable oil spread to saucepan. Stir until vegetable oil spread is completely melted. Add arborio rice to saucepan and cook until slightly brown.
4. Add white wine to saucepan and stir frequently until most of the white wine has absorbed into the rice.
