This is an easy low carb chicken recipe that you can make made in the Instant Pot Pressure Cooker, or Stovetop.
In a small bowl, combine the butter, thyme, sage, onion flakes, salt, garlic powder and pepper. Mix until all the ingredients are well incorporated. Place the chicken, breast side up, in a shallow roasting pan. Add the chicken stock to the bottom of the roasting pan.
While fresh herbs are best for this garlic butter roast chicken, you can use dried herbs if you are in a pinch. Make sure you adjust the recipe according as the general rule of thumb is that 1 tbsp of fresh herbs = 1 tsp of dried herbs.
