This Galbi recipe reflects the traditional or classic style commonly seen at specialized Korean BBQ restaurants in Korea. The cut of beef used in this recipe is called Wang-Galbi, which means "King-Rib". Although the wang-galbi cut is the best in taste and presentation, you can use LA Galbi or other tender steak cuts if you wish.
There are two types of galbi. One is the traditional style that chunk of rib meat is attached to the bone, then butterflied to lengthen, and marinated with the sauce. The other kind is the famous LA galbi, which the rib is cut across the bone thinly. This American style cut is originated by Korean immigrants who lived in Los Angeles.
It’s cut across and along the bone. Each piece that goes on the grill is one section of the rib, with one piece of bone in it. It’s a lot thicker. LA galbi is only cut across the bone, not along, so each piece on the grill is a longer, thinner strip, and includes 3 pieces of bone.
