3. Simmer for 3 to 4 minutes, stirring constantly, until sauce thickens and chicken is cooked through. Turn heat down to low and simmer 2 to 3 minutes longer until sauce reaches desired consistency.
4. Serve chicken over white rice garnished with scallions.
