3. In a small bowl, stir 1 tsp. curry powder, 2 Tbsp. brown sugar, 1 tsp. Spanish paprika, and 1/4 tsp. each salt and ground black pepper until combined. sprinkle then rub sugar mixture over ribs on both sides. Transfer to a rimmed baking sheet or pan. Cover with foil.
4. Roast in the preheated oven for 1 hour. Pour in 1 c. water into the pan, cover again with foil, and roast for another 1 hour.
