For a spicier chutney, use whole bottle of Ezy-Sauce My Mum made one or two batches of Tomato Chutney every year using a recipe that is in the Green & Gold Cookery Book. I don’t remember her putting garlic in it but I know the recipe has sultanas (or maybe raisins) in it.
She made it in an old fashioned jam pan. (it was large enough to put 12 pound of fruit, 9 pounds of sugar (put on top of the fruit) + water in it to prevent the sugar sticking to the pan until enough of the juice was released from the fruit.. (that explains the size of the pan we used)…. I can assure you we never cooked the chutney for 5 hours.
