1. Add all of the ingredients to a medium saucepan and bring to a boil.
2. Reduce heat and simmer for 30 minutes.
3. Blend with an immersion blender (or transfer to a blender) until mostly smooth.
4. Strain through a fine strainer into a clean bowl and then pour through a funnel into a clean glass jar. Store in the refrigerator for up to one month or freeze for up to 3 months.

2. Simmer for 45 minutes or until liquid is reduced by half. Turn off heat and allow to cool until just warm.
3. Pour syrup through strainer into a glass bowl, discard remaining elderberries. Add honey or monk fruit sweetener and stir well
4. Store in the fridge in a sealed container for up to three months. Mason jars work great.

2. Put six cups of fresh black or blue elderberries (or three cups dried) into a large pot with six cups of water.
3. Bring it to a boil over medium heat, then lower the heat and simmer the elderberries uncovered for about one hour, or until reduced by nearly half. If you feel like it is reducing a bit too fast, you can partially cover the pot while it is simmering.
4. Remove the pot from the heat and set aside to cool to warm room temperature for at least 30 minutes.
